Banana Bread Muffins


On stormy winter days, there's nothing more comforting and delicious than a steaming hot banana muffin fresh out of the oven, smeared with butter.  They literally melt in your mouth and could satisfy any winter cravings. 
 
Banana Bread Muffins

400ml flour
100ml oat bran
10ml baking powder
1ml bicarbonate of soda
2ml salt
125g butter or margarine
200ml sugar
2 eggs
4-5 over ripe bananas (mashed)
10ml vanilla essence
makes 18 medium sized muffins 

In a mixing bowl cream butter/margarine and sugar until light and creamy. Add eggs one at a time and continue to beat until the mixture is well-combined and light in colour. Then add the mashed bananas, the mixture may appear curdled but this will disappear once the flour is added. Add vanilla essence. Sift your flour, baking powder, salt and rest of dry ingredients.  Gentle add dry ingredients to previous mixture, and combine without over mixing. Spoon large tablespoons into cupcake holders. Place into a heated oven, 180 C and bake for around 20-25 minutes until just golden. Serve them warm and straight out the oven with butter smeared over the top.
